About Down Thyme
A passionate Turkish / German hospitality combination.
Down Thyme Restaurant and Café came from our shared passion to provide tasty food, great service and a warm and inviting ambiance.
Growing up in small villages, we learned to use what the earth gave us and make use of the seasonal food supply. We love to cook using only the best ingredients. Together, we have have a combined experience of over 70 years in hospitality.
Roland: My exposure to food preparation and sampling of the final product started early - growing up, my Dad was a butcher and Mum a fantastic home cook and baker. Our bread was baked in a wood fired communal brick oven in the village. After leaving home, I travelled extensively. I've borrowed a lot of different flavours and food styles over my 50 years as a chef.
Mufide: I was born and raised in Turkey. My grandmother was a great cook (I'm still using her recipes today). In 2003 I emigrated to New Zealand. Since then, I have owned several restaurants and Turkish takeaway businesses around the North Island as well as managing a large Turkish restaurant in Auckland for 2 years. My knowledge and experience compliments that of Roland, bringing in the Mediterranean side of the flavour palate. I share a love of food and great service with Roland
